Our Royal Icing is known for its velvety, spreadable consistency. Apply with a spatula or from a piping bag fitted with various decorating tips to create intricate designs such as lace, flowers, scrolls, and borders which keep their detail as it dries firmly.

“TIP” Add a touch of food-grade glycerine for a soft dry. This icing can also be used for “flooding” techniques, where it is thinned with a small measure of water to create a smooth, even surface on cookies and cake tops.

Founded out of love and pride for my Jamaican heritage and tradition, my love of the food, culture, and our people

As a child, my mother would make traditional Jamaican Wedding Cakes also known as Fruitcake. It would then be blanketed in almond paste or marzipan, covered in thick, creamy Royal Icing, then elegantly and beautifully decorated in floral detail with edible silver beads….. Breathtaking!

It was our pleasure as children to fight over the scrapings of cake batter from the bowl and wooden spoon. But, the best part was to lick that mouth-watering tangy but sweet icing off the spoon…… Heavenly!

Living in the United States, I noticed that although many of us Caribbeans made our traditional Fruitcake, the Icing which I grew up on and loved so much was a rarity. So I purposed in my heart to revive it and reintroduce it to the next generation. Hence, Jacqueline’s Jamaican Style Royal Icing. Dedicated to my beloved vibrant mother, Florence Maud.
